Gentlemen! How are you? This is Eve-chan of Minami Aoyama Toriyako. Today, I would like to introduce "Chochin," a part of yakitori.

Chochin" refers to a chicken "string" and "kinkan" that are skewered together to make yakitori.
The part of the hen's ovary that is the yolk before it takes the form of an egg is the "kinkan," and the part of the oviduct or ovary through which the kinkan passes until the egg is laid is the "string.

In other words, chochin is the part of the chicken around the ovary, but it is a very rare part because only one skewer can be obtained from a single chicken.

The kumquat tastes like an egg yolk, and when you bite into it, the rich flavor spreads in your mouth.
String has a light flavor on its own, but its firm texture is addictive.
It is recommended to dip it in the sauce and put it in your mouth at once.

Incidentally, the name "chochin" comes from the fact that when the kumquat is placed on the bottom and the skewer is held, it looks like a lantern (chochin).
