【焼鳥部位のご紹介】希少部位「ちょうちん」｜@南青山 とりや幸（表参道/青山/焼き鳥/ワイン）

皆さん！お元気ですか？ 南青山とりや幸のイブちゃんです。 本日紹介する焼鳥部位は「ちょうちん」です。

「ちょうちん」は鶏の「ひも」と「きんかん」を一緒に串にさして焼鳥にしたもののことを言います。
※鶏の卵巣の中で卵の形になる前の卵黄の部分を「きんかん」、卵が産卵されるまできんかんが通ってくる輸卵管や卵巣にあたる部分が「ひも」になります。

つまり、ちょうちんは鶏の卵巣周辺の部位になるのですが、鶏1羽から串一本分しか取れないため大変希少な部位になります。

ちょうちんの味わいですが、きんかんは卵の黄身のような味で、プチっと噛むと濃厚な味わいが口の中に広がります。
ひもは単体では淡泊な味ですが、こりこりした食感がくせになります。
タレを絡めて一気に口に入れるのがおすすめです。

ちなみに「ちょうちん」という名前の由来はきんかんを下にして串を持つと提灯(ちょうちん)に見えるからだそうです。
