<What is HATSU?

Hatsu refers to the heart of a chicken. The heart is called "heart" in English, and the plural of heart is "hatsu.
It is sometimes called "heart" or "kokoro" as it is.

Taste Characteristics

The hatsu is relatively easy to eat because it has less odor than other internal organ parts.
It is characterized by its elasticity, firm texture, and rich flavor.
It is often served with the blood vessels and other parts removed, but if you are still concerned about the unique smell of the internal parts, we recommend eating it with sauce.

<What is Hatsumoto?

● Difference from Hatsu

Hatsumoto, as the name suggests, is the root of the hatsu, and is one of the rarest parts of the meat, as it takes about five birds to make one skewer.
It is sometimes called "Kokoro no kokoro."
It is said that the name came about because many restaurants throw it away because of the tedious preparation process and it is left uneaten.
It is characterized by its crispy and crunchy texture.
