本日紹介する焼鳥部位は「さえずり」です。

＜さえずりとは？どこの部位？＞

さえずりは鶏の気道のことです。鶏が鳴くときにこの空気の通り道である気道を使うため「さえずり」と呼ばれるようになったと言われています。※諸説あります。
鶏の気道は１羽からわずかしかとれないため焼鳥の中では希少部位として知られています。
首の周りのお肉である「せせり」の内側に位置して食堂と引っ付いた状態で提供されることもあります。

＜さえずりの味＞

さえずりはこりこりと弾力のある食感が特徴で、表面には脂ものっていてその旨味も楽しむことができます。
ただ、気道は空気の通り道、食道は餌の通り道ですので、他のお肉の部位と比較すると比較的汚れが残りやすい部位になるため、調理する際は外側も内側もしっかりとあらう必要があります。
